It's been a few days since I've given much of an update so here's what's been going on. The leaves are turning beautiful colors all around us. It's definitely better than it's been in a few years.

My best friend, Tess, moved here from Arizona a few months ago so she's been spending a lot of time with us lately. It's been great having her around and William is loving his new playmate.
Dinner one night...I just love how William is the only one aware a picture is being taken :P
Since we were given a big bag of apples by some friends, I decided to test out a gluten-free pie crust recipe that I've been wanting to try. It came out quite good for being gluten free! This blog has great recipes when it comes to gluten-free baking: http://alittleinsanity.com/gluten-free-pie-crust-recipe/
Needless to say, the pie didn't stick around longer than 2 days :) Mmmmmm!
Saturday, my sister and brother-in-law went out to join the "Elite Honda Club" (they needed a new sedan for his work) so since Tess was over babysitting their kids while they were car shopping, they invited us to come over afterwards for dinner to celebrate the newest addition. ;) I decided to make dessert and since we're all pretty much gluten-free, I thought I would try out a gluten-free Toll House Cookie recipe from that same blog. Well...they tasted ok...
But since they didn't quite look nice enough to bring to someone's house, I pressed them to the bottom of a pan, scooped ice cream over it, and then topped it with more cookies. "Disaster Cookies a la mode!" :P Pretty sure it was the fact that I used all butter...I've always had trouble with flat cookies when I used all butter. Next time I might do half butter, half coconut oil and see if that helps. I didn't melt the butter and even refrigerated the batter before baking...guess I'll just have to keep "testing" the recipe. ;)
It's so nice to have the beautiful sunny days again. Last week we were cooped up inside due to rainy, miserable days. William and I didn't do so well on those days...
William expressing outwardly what I felt inwardly :P
But finally on Friday, we had a sunny, autumn day, so I got out the stroller and we both got out of the house for a walk. It felt so good!
This kid was just as happy to get out!
This morning while we were chilling in bed, I sat William up and he stayed up on his own for longer than he has so far.
He was quite proud of himself. :)
...until he leaned forward to let out a "toot," which threw him off balance :P
In other news, I'm really building up my collection of essential oils. Plant Therapy had a sale this week, so I bought a few synergy blends, including Germ-fighter, and Immune-booster. I also bought a diffuser, so hopefully it will help keep us all healthy with the upcoming "cold" season looming over us.
Zenith is really getting to be an expert latte and espresso maker. He is even getting fancy with designs...not sure if the heart was an accident or not though. ;)
Cuppa anyone?
That's all for now. William needs to be tucked into bed and then we have to say our rosary.
I'll send you off with a picture of William that Zenith took from tonight.
"Oh Daddy, you're just too funny!"
Nighty night!
~Lindsay
