Gluten-Free Banana Bread

Since I'm here, I might as well post what I came up with yesterday.  When I started going gluten-free, I was devastated at the thought of all the sweets and breads I would no longer be able to have.  But I must say, THIS is even better than the real thing!

2 cups Bob's Red Mill all purpose GF flour
1 1/3 cup sugar
½ tsp salt
1 tsp baking powder
3 very ripe bananas
½ cup natural applesauce
4 eggs
½ cup oil (I used canola but coconut oil should work)
1/3 cup buttermilk

Combine flour, sugar, salt, and baking powder in bowl.  In separate bowl, beat bananas until mashed (I used my processor with whisk attachment). Add applesauce, eggs, oil and buttermilk and beat until well combined.  Add flour mixture and beat on high speed until it starts to get fluffy.  The more you beat, the denser the bread will be.  Pour into greased 9x9 pan and bake at 320 for 1 hour and 15 minutes or until it is a dark golden brown and the middle is firm.
